Vaghareli Rotli

Vaghareli rotli is a Gujarati dish made from leftover chapatis which is lightly spiced and tempered. This recipe was taught to me by my mum.

Ingredients: 4 leftover chapatis (Gujarati chapatis are usually smaller than "regular" chapatis)

1 heaped tbsp natural or greek yogurt

1/2 tsp turmeric powder

1/2 tsp green masala

Salt to taste 1/2 cup water (or more depending on the consistency you want)

1 tbsp oil

1/2 tsp cumin seeds


Method

The first step is to rip your chapatis into small pieces and place them into a bowl.

To the ripped up chapatis add in the yogurt, turmeric powder, green masala and salt. Mix well.

Once everything is fully mixed add in the water and allow the mixture to rest for a few minutes. The chapatis will soak up the water. If you want a more runnier dish add more water at this stage.

In a pan heat up some oil and once hot add in the cumin seeds. Once the cumin seeds have browned and become fragrant, add in the chapati mixture and cook on a medium heat.

Stir this occasionally and allow the mixture to cook. The mixture will change colour as it cooks. After a few minutes once the whole mixture is hot it is ready to serve.

This Vaghareli Rotli is on the thicker side. If you prefer it runnier add more water. This dish was something my grandma would make for my mum as part of her school packed lunch.
