Til ke ladoo

Every year growing up when Makar Sankranti/Uttarayan were approaching my mum would make these til ke ladoo - "tal na ladva" in Gujarati. Super easy to make and a delicious snack to have.

Ingredients:
A little under 1 cup of sesame seeds
1 tbsp melted ghee
1/2 cup jaggery
Method
Add the sesame seeds in to a pan and gently roast on a medium to low heat. The sesame seeds will begin to crackle, change a little in colour and give off an aroma. Be careful not to burn the sesame seeds. Then transfer to a plate to cool and so they don't roast further while in the pan.
Now add the melted ghee and jaggery to the pan and allow the jaggery to melt on a medium heat. The jaggery will begin to bubble. At this stage turn the heat off and add the sesame seeds.
Mix the jaggery and sesame seeds until fully combined and allow the mixture to cool slightly. You don't want it to cool down fully as we need to shape the mixture, as this will harden once cool.
When the mixture is cool enough to touch, take a little mixture at a time and shape them into balls with your hands. Apply gentle pressure while forming the balls as too much pressure can alter the shape. You can also apply cold water to your hands to stop the mixture from sticking to your hands . This will also keep your hands cool if the mixture feels hot.
Leave the balls to cool then they will be ready to eat. These can also be flattened or rolled out in a pan to make sesame brittle/chikki. Enjoy this tasty snack for Makar Sankranti / Uttarayan.
