Sabudana vada

Sabudana are sago pearls made from sago palm which give a lovely texture in these vada. Sabudana are permissable to be eaten during a Hindu fast/vrat. If making farali sabudana vada use rock salt instead of regular table salt in this recipe.

Ingredients: 1 cup bloomed sago pearls/seeds 1 large boiled potato or enought to bind

1/2 cup ground roasted peanuts

3 chopped green chillies or to taste

1 inch piece grated ginger

Handful of chopped coriander leaves

Salt to taste (use rock salt for farali sabudana vadas)


Blooming sabudana:

Firstly you will need to bloom the sabudana/sago pearls. Soak the sabudana in cold water for 2-3 hours. Drain the water and give the sabudana a rinse and leave the sabudana covered to bloom overnight or for 6-8 hours.

Method

In a bowl mix together bloomed sago seeds, boiled mash potatoes, ground roasted peanuts, green chillies, ginger, corainder leaves and salt.

Once fully combined roll a little mixture in the palm of your hands to form bite size balls and flatten them slightly.

Fry these on medium heat until golden and crispy. You can also change the shape to your preference. You can keep the round like balls or make them into rolls.

These sabudana vadas are popular Gujarati and Marathi food item which taste best eaten hot.
