Mug nu Shaak

Here I will be sharing a Gujarati style mung bean curry which was taught to me by my mum. The name of this dish is Mug nu Shaak or Khatta Meetha Mug as it is sweet and sour. However in my household we don't eat sweet meals (unless I add it myself) so my mum would not add jaggery which adds the sweetness to this dish. Here is how to make Mug nu Shaak.

Mug nu Shaak Mung Bean Curry Gujarati Recipe

Ingredients: 1/2 cup whole mung beans (I used more in the image) 1 and 1/2 cup water 2 tbsp oil 1/2 tsp mustard seeds 1 chopped tomato 8-10 curry leaves 1 tsp green masala (ginger, garlic, green chilli paste) 1/2 tsp red chilli powder 1/2 tsp turmeric powder 1 tsp coriander cumin powder 1/4 tsp garam masala Salt to taste 2 tsp jaggery (optional/ to taste) 1 tbsp tamarind water (optional/to taste) Coriander leaves Method Wash your mung beans and add them into a pressure cooker along with water and cook for 5 whistles on a medium heat. Then leave the pressure cooker to sit as this will allow the pressure to release as the cooker cools down. There still should be some liquid left with the cooked mung beans when you open the pressure cooker. I used more mung beans hence mine had no water.

In a pan heat up the oil and add in the mustard seeds. When they've stopped popping, add in your chopped tomato curry leaves and all the spices. Cook this for around 5-10 minutes or until the tomatoes are soft and break apart easily. The oil should also separate from the mixture.

Then add in your cooked mung beans and mix. Add water to adjust the consistency to your preference. Allow the mixture to come to a low simmer.

Then add in the jaggery and tamarind water - optional if you want a sweet or sour taste. Once the jaggery has melted and the mung bean curry is hot, garnish with coriander leaves and enjoy! I made the tamarind water by adding 1 tbsp of dried tamarind to some hot water. Then I strained the mixture after 5 minutes to get rid of the seeds & tamarind skin.

This mung bean curry - mug nu shaak goes perfect with both chapatis and white rice. This also goes perfect with Gujarati kadhi or plain yogurt. You can pour the kadhi on top of this mug nu shaak and mix it all up.
