Growing up white and yellow penda were always on my shopping list when visiting an Indian sweet shop. Here's the recipe for the white penda which are lightly spiced with cardamon.

Ingredients:
1 tbsp melted ghee
3 cups milk powder
1 cup milk
1/2 cup sugar
1/2 tsp cardamon powder
Method
In a pan mix the ghee, milk powder, milk and sugar and cook on a low heat. Continuously mix so the mixture does not stick/burn to the bottom of the pan. Once the mixture becomes thick add the cardamon powder and cook further until the mixture begins to leave the pan. You can also take a little bit of the mixture into your hands and if it forms into a ball the mixture is ready.
Transfer the mixture into the plate to allow it to cool down. Once the mixture is safe to touch make small balls with your hand and using a toothpick make 4 indentations across the ball to resemble a pumpkin. You can also use food colouring to paint the penda. Cut a pocky stick to around 1 inch in size and place this into the ball to resemble the stalk of a pumpkin.
These can also be made into any shape you like. You can leave them as balls then slighly press them down. Allow these to set and then enjoy.
