Methi puri is a delicious fenugreek spiced fried bread. This reminds me of my childhood at my cousin's house where my aunt would make these occasionally for breakfast.

Ingredients: 2 cups chapati flour 2 tbsp oil 1/2 cup chopped fenugreek leaves 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1 tsp green masala Salt to taste Luke warm water 1/2 tsp oil Method To some chapati flour add oil and rub thoroughly into the flour. Then follow by adding in the fenugreek leaves, turmeric powder, red chilli powder, green masala and salt. Mix well.
Add luke warm water bit by bit to form a soft dough. Using a little oil add to your palms and massage into the dough which mill make it smooth and soft.
Leave the dough to rest for 10 mintues. Make small balls from the dough and roll into 3 inch circles around 2mm in thickness.
Fry the puris on medium to high heat for 1 to 2 minutes. The puris should be lightly golden and puff up. If the oil is hot enough the puris will puff, if not the puris will stay flat.
These go perfect with chai or even a curry for a spicier alternative to plain puris/chapatis.
