Mango Peda Sandwich

I am in love with my mango peda recipe. I can eat so many of these pedas. I wanted to do something different for this Diwali. I recall seeing the vadilal mango ice cream biscuit sandwich but could never find it so thought to add my mango penda mixture between two parle g biscuits!

Ingredients:

1 tbsp melted ghee - 12g

2 cups milk powder - 150g

1/3 cup sugar - 70g

1 cup kesar mango pulp - 230g


Method

In a pan add the melted ghee, milk powder, sugar and kesar mango pulp. Mix everything and cook on a low heat. The mixture will become slightly runny as everything combines together. After a while it will begin to thicken, even more as it cools. I left the mixture on a more runnier side in this recipe as I am piping the mixture. If you're making peda cook the mixture a little longer but not too much as you still want moist pedas. You can add more milk powder to thicken the mixture if you feel it needs any. The amount of sugar can also be adjusted to your preference.

Leave your mixture to cool slightly once you get to the desired consistency. Once it's cooled slightly, add the mixture into a piping bag.

Pipe the mango peda mixture onto one parle g biscuit and then place another biscuit on top creating a sandwich. The amount of mixture you use is up to you.

Allow the mixture to set. As the mixture has moisture the biscuits will become soft. The parle g biscuit and mango flavour really go well together. The perfect little treat for this festive season.
