Kharkharia are another Diwali food snack I've grown up eating that remind me of my childhood. These are cracker like, flakey and lightly sweet. This is another recipe taught to me by my mum.

Ingredients:
2 cups plain flour
1 1/2 tbsp sesame seeds
3 tbsp melted ghee
1/2 cup milk
1/2 cup water
1/2 cup sugar
Method
In a bowl add the plain flour, sesame seeds and ghee. Rub the ghee throughly into the flour.
In a pan add the water, milk and sugar. Heat on a low to medium heat until the sugar has dissolved. Do not bring the mixture to a boil. Add this liquid mixture to the flour mixture in stages to form a soft dough. You may not need all of the liquid mixture.
Make small balls from the dough and roll into medium rouds around 1mm in thickness. Leave these out to air dry for an hour. This will help give that crispy cracker like texture. Once dry fry these on medium heat until lightly golden. You do not want these dark brown as the taste will change because of the sugar in the dough.
You can adjust the quantity of the sugar to your preference. You may also need to roll out the kharkharia a little more once they've dried as they can shrink a little. These Kharkharia are also known as Suvari. Store these in an air tight container to keep them crisp.
