Fada lapsi

Fada Lapsi is a traditional Gujarati sweet dish made from cracked wheat. While I was growing up this was served alot at weddings or at religious ceremonies. But in the last couple of years I have not seen it around and then one day my cousin came over and had given me some Lapsi she had made. It was amazing so I had to ask her how she made it. Here is how I made the Lapsi.

Ingredients: 1/4 cup melted ghee
3/4 cup broken wheat/fada
1 cinnamon stick (2-3 inches)
1 tsp sultanas
3 x 3/4 cup hot water
1/2 cup sugar
4 green cardamon pods
1/4 tsp fennel seeds
1 tsp silvered almonds
Method
Heat some melted ghee in a pan then add the broken wheat/fada and roast. Roast on a medium to low heat until the broken wheat begins to change to a golden colour and give off a fragrance. The broken wheat will swell slightly. (You can also roast with the cinnamon too at this stage).
Once roasted add in the the cinnamon stick and sultanas followed by the hot water. For every one part of broken wheat you use, use 3 parts hot water.
Mix this well and cook on a medium to low heat with the lid on. The broken wheat will absorb all the water and become fluffy. This stage took me around 30 minutes. Once all the water has been absorbed add in the sugar, cardamon pods, fennel seeds and slivered almonds.
Mix and cook on a low heat. The sugar will release water which needs to be cooked off. When there is no water left your Fada Lapsi is done.
Fada lapsi can be served hot or cold. I find this Lapsi tastes better the next day as the flavours develop. The taste also reminds me of the sweet Gulab Jamun.
