Dhana Jeeru

Dhana (Coriander) Jeeru (Cumin) is a spice mix used alot in Gujarati cuisine. My mum makes dhana jeeru at home just using the two ingredients. This spice mix varies between different households. Some people add black peppercorns, bay leaves and/or fennels seeds and even roast the spices beforehand. This is how I'v been taught to make it.

Ingredients: 1 cup coriander seeds (61g) 1/8 cup cumin seeds (17g) Method Add coriander seeds and cumin seeds into a spice/coffee grinder and grind into a powder.

Once ground sieve to get a finely ground spice mix. If you prefer a coarse mix you can skip this step.

Grind the coarse mix again and seive again. Repeat the process until your mix is finely ground.

This spice mix will leave a lovely aroma in the air and the recipes were I mention coriander cumin powder will be this exact spice mix.
