Chakri

Chakri/Chakli (spirals) is one of my favourite snacks that are made during Diwali. They are moreish and super crunchy! You'll be noticed while eating these.

Ingredients:

2 cups rice flour

1 cup self-raising flour

2 tbsp melted butter

1/4 cup boiled mash potato

1 tbsp green chilli paste

1 tbsp ginger paste

1 1/2 tsp carom seeds

1 tbsp sesame seeds

1/2 tsp turmeric powder

Salt to taste

Juice of 1/2 lemon

Water


Method

In a large bowl mix together all the ingredients apart from the water until fully combined.

Add water gradually to form a firm pliable dough, similar to play-dough.

Using a sev maker/sancha you want to place the star design in the bottom of the sancha and grease the inside of the sancha with a little oil to stop the dough from sticking. Place some of the dough inside the sancha and screw the top on. Turn the handle which will push out the dough from the star nozzle. Move the sancha in a circular motion so the dough forms a spiral shape. You can make these as big or as small as you like. Press the end of the dough so the chakri does not open and stays intact while frying.

Fry these on a medium heat until light brown. Constantly stir and flip for an even colouring.

If you prefer crunchy chakris fry these to a medium brown colour. If you don't want them super crunchy fry them until they are light golden in colour. Cool and store in an air tight container.
