Bateta Marcha nu Shaak

Here I am going to share a recipe my mum makes. It's called bateta marcha nu shaak which is potatoes and bell pepper curry.

Ingredients:
3 tbsp oil
1/2 tsp mustard seeds
1/4 tsp asafoetida
2 tbsp besan/gram flour/chana no lot
2 medium diced potatoes
1 1/2 diced bell peppers
2 tsp red chilli powder
1 tsp turmeric powder
2 tsp coriander cumin powder
Salt to taste
Coriander leaves
Water if needed to help the potatoes cook.
Method
In a pan heat up the oil and once hot add in the mustard seeds. When the mustard seeds have stopped spluttering add in the asafoetida and let this brown a little. Then add in the besan and roast this for a few mintues. The mixture will become frothy and the colour will change slightly and give off an aroma as it roasts. Roast until lightly golden.
Once your besan has roasted add in the diced potatoes and bell peppers. I've used mixed colours here but you can use any coloured peppers you like. Mix the vegetables and besan mixture well.
Once mixed add in the spices and mix again. You can adjust the chilli according to your taste.
Mix everything well and cook this on a medium heat with the lid covered while stirring occasionally. While the vegetables cook, steam will gather on the lid and help the potatoes cook. However you can add splashes of water if you feel it needs it to help the potatoes cook and to stop the vegetables from burning in the pan. Cook until the potatoes are soft and break apart.
Finish off by garnishing with corainder leaves and serve this with hot chapatis. Enjoy!
